Is it safe for me to wipe down the Coroplast with Clorox wipes?

I wouldn't use them. Plain white vinegar and water works well and is non toxic. Just mix half and half. Vinegar is so good, you can even use it to kill/clean black mold.

I've used Lysol wipes once when I was out of vinegar but then I rewashed with dawn dishsoap to get rid of any lysol residue and rinsed the whole thing really well.

A 50/50 mix of water and white vinegar works great and is non-toxic to guinea pigs. I put it in a spray bottle for easy use.

I was using undiluted vinegar! No wonder the odor was overwhelming.
