Ok, so I changed my Piggies diet from apples and carrots to hay, pellets, cellary, butter lettuce, curled parsley and green bell peppers. Have I got it right now?
You can probably cut out the celery. Not much nutrition in it and they can choke on the strings. Parsley shouldn't be a daily part of the diet but more like 2-4 times/week. Add cilantro, they can have that daily.
If you cut the celery to smaller than 2" pieces, it's fine. Your diet looks much better! I wouldn't feed cilantro daily, personally, because it is still a little higher in calcium than I'm comfortable with. Check the nutrition charts and threads here for more variety, but overall you are definitely on the right track!
