Also, what are some other high in vitamin C, low in calcium veggies I can feed every day?

if you leave bell pepper out, I'm sure the pig will eat it. One of my pigs isn't keen on peppers, she leaves them until last, and even then she will leave them for a little while before eating them. They're always gone before the next feeding though. There are other veggies with vitamin C too, so I wouldn't worry about it too much.

Can you actually feed them Little Gem lettuce and fine beans? It didn't mention them on the list but I want to make sure...

If it's not on the list, don't feed it.

I left a small amount of yellow bell pepper in the cage until it was not good enough to eat. He didn't touch it! I will try different coloured peppers as well but he just refused to eat that, even hours after he'd eaten up his veggies, grass and majority of pellets and was just left with hay.
Strange guinea pig, he must really dislike the taste!

You can teach them to eat veggies by dicing them VERY fine and sprinkling them on the pellets. Choose one veggie to feed that way, and give it for several days. They'll get enough by accident to get accustomed to the taste, and then you can feed in larger quantities. Once they'll eat one new veggie in larger pieces, then start on another one.

Of your list of veggies, broccoli, cauliflower, cucumber and cabbage are gas producing, and may lead to bloat, so they should be fed in small amounts and not very often. Kale is too high in vitamin A and calcium to be fed very often at all. Romaine lettuce causes powdery/sludgy urine in some pigs, so if you see white deposits in your cage when you're changing it, switch them to red and green leaf lettuce.
