How do I know they get enough?

How do I know if my guinea pigs get enough vitamin c? Right now, they are only on 2 meals a day due to how early I have to go to school, I don't have time to feed them in the morning. This is their meal:
About 3:00pm everyday they get 2 leaves of romaine each pig, and about 1 baby carrot each pig. I throw in some cucumbers, kale, or parsley every now and then, but parsley and kale don't usually go in there because I don't usually get it. Aldi's dosen't have parsley or kale.
then about 8:00-9:00 they get apples(mixed in every 2-3 days), peppers(almost every day considering the cost), cucumbers(if they didn't get them at lunch), spinach(3 times a week), and sometimes they get more romaine, it depends on how much I bought that week.
So it's like this everyday:
3:00- 2 leaves Romaine per pig, carrots
8:00- Peppers(Red, yellow, or green), Cucumbers, spinach(3 times a week), sometimes Romaine, occasionally apples.

Is this enough vitamin c? Should I buy parsley, kale, cilantro to add to their diet everyday? My mom is never excited about going more than 1 place a week for them(not a big fan of pigs) but I think I could convince her. Do I need to give my pigs vitamins? They also get unlimited pellets, hay, and fresh water. They all are perfectly healthy, but still I am worried. Please help!
 
it sounds fine, if you feed them pellets they get most of there vit. C from them. the veggies are kinda just add ons
 
Oh really? I thought the pellets were just add ons. Dagwell, what do you feed Dagwell and Atticus so I can sort of compare it?
 
i feed them pellets for them that is there staple that way I am always sure they get what they need. If they stop eating them i give them less veggies, just in case.The piggy food in my fridge is dandelion, pepper, apples, a couple baby carrots,arugala, and cilantro. I mix it up and i give them about a few hand fulls a day.Oh yeah i give Dagwell grapes Atticus doesnt really like them. and of course unlimited hay and wate and oxbow pellets with some not as good alfalfa pellets mixed with it for atticus.
 
This is what I give on a particular day:

7.00 am --> Handfull of kale, half a carrot, a couple of big handfulls of grass
6.00 pm --> A couple of cucumbers, a couple of sprigs of parsley
9.00 pm --> Romain lettute, tomato
 
The cavies main diet should consist of unlimited amounts of hay and veggies. Pellets are a supplement.

I give my pigs 2 feedings per day
Early feeding consists of lots of red or green leaf lettuce, a few green beans, a few sprigs of cilantro and a couple large turnip green leaves.
Late feeding consists of lots of red or green leaf lettuce, 1/4 of a bell pepper, a couple leaves of kale, roma tomato and a tiny piece of fruit each and then I add in an extra ingredient depending on what day it is. The extra ingredients are baby carrots (2 times a week now instead of every other day due to high Vit A content), spinach (1-2 times a week due to high calcium levels), an ear of corn about once per week including silks and husks. Plus when I have the following on hand they get it once in a while, zucchini, broccoli, cauliflower, asparagus, cucumber. My girls do get romaine when it's not outrageously expensive and looks really good but lately it looks horrible here.
