    For lunch lately I've been having canned soup. It's a ton of sodium but one can is a decent lunch size without making me feel sleepy, and you could always make a big batch in the crock pot or on the weekend and freeze it in smaller tupperware to eat during the week. I'm getting a little sick of soup personally but work has been so backed up because of the snow days that it's been a godsend to have a lunch I can just slurp out of my mug while I work.

    @SomethingFunny : I had a time at the beginning of the year when all I would have for lunch was soup too. not so much because I didn't have time for a proper lunch break but because I love soup and tea in the winter time. I noticed the high sodium content of canned soups as well and started buying the "less sodium" versions. it's still a good amount but they do contain considerably less - just a thought, maybe you could switch to those?

    I also made a lot of african chicken peanut soup (another costco recipie).
    it's a tomato soup base but you add crunchy peanut butter, shredded rotisserie chicken and (my personal preference) lots of ginger and some garlic as seasoning. it's so easy and fast to make, don't even need a crock pot and it's an awesome way of using up leftover rotisserie, plus the combination of flavors is just great, it's one of my favorite soups!

    Okay here goes. I'm not the most precise measurer in the world with cooking, I eyeball it a lot. It also depends on the size of your slow cooker. You want the pot to be at least 1/2 full but no more than 2/3rds full once the meat and liquid is in to prevent boiling over.

    Ingredients:
    1 3-4lb corned beef brisket

    Handful of baby carrots

    Handful baby red potatoes

    I small yellow onion, chopped into bite sized pieces.

    Celery if you want-I can't stand the stuff so I personally left it out.

    1/2 head of Savoy cabbage, cut into small wedges

    4-6 cups water
    Some people also put in a can of dark beer such as Guinness, or use chicken stock. I found it plenty flavorful with just the water and spices.

    Picking spices - most corned beef briskets come with a packet of spices. Or you can buy pickling spices like http://www.mccormick.com/Spices-and-...Pickling-Spice
    Or blend your own. I used: mustard seed, ginger, chili pepper, cinnamon, allspice, coriander seed, clove, juniper berry, and a crushed bay leaf.

    Coarse mustard for dipping

    Place the carrots, onion, potato, and celery in the bottom of your slow cooker.

    Layer the beef brisket on top of your veg, fatty side up. Sprinkle the pickling spices on top.

    Pour in enough liquid to just cover the brisket.

    Cook 4.25 hours on high or 8.5 on low until the beef is tender - you should be able to stick a fork in and pull it back out easily.

    Add the cabbage to the slow cooker on top of the beef and cook for an additional 45-60 minutes until the cabbage is tender.

    Slice the beef thinly against the grain.

    Serve with coarse mustard and some of the cooking liquid.

    'Cuz most my lunch hour was dedicated to my new foster piggy, who was dropped off with me while at work. Most my lunch was dedicated to going home, getting Leap (piggy) settled in, and getting veggies prepared for him to help him chill from his travel.

    So I swung by Del Taco by work on the way back

    Gotta love the piggies c:

    Oh yep I highly recommend that! I love it! Ill post the recipe tomorrow if I dont find time tonight. Got housekeeping to catch up on and 5 fur babes to take care of and get ready for the night. Hubby is working late so no help there unfortunately

    @melynda I hate celery too, I only buy it for Ferb piggie. I don't own a slow cooker but am considering getting one.

    I highly recommend getting a crockpot! I love mine
    I acutally got a Ninja and even though it was a bit more expensive than other ones ($80 at walmart), it was well worth the investment. the advantage of this one is that is has "stove top" settings besides just the "slow cooker" settings of other crockpots. this way I'm able to sear/saute etc right there in my crockpot and then just switch to slow cooking - do everything in one pot rather than still having to use a pan/stove to sear the meat before putting it in the crockpot. the stove top setting works surprisingly well for both stew meat and larger roasts!


    ok so here's the recipe for the African Peanut Soup:

    2 tablespoons vegetable oil
    1 large yellow/white onion, finely chopped
    3in piece ginger, pealed and minced (I love ginger so I used a bunch more)
    3-5 garlic gloves, finely minced
    1 quart chicken stock
    1 (15oz) can crushed tomatoes
    3/4cup crunchy peanut butter
    2cups rotisserie chicken
    salt, pepper, cayenne pepper.

    you basically just saute the onion, then after a few minutes you add the garlic and ginger and saute for a couple more minutes.

    then add chicken stock, crushed tomatoes and peanut butter and stir until well blended.

    bring to a simmer and add spices to taste

    cover the pot and let simmer for 5-10min

    add chicken to the soup and heat until warmed through

    add more water/chicken broth (or peanut butter) to achieve desired consistency

    I had so many people mad at me for not giving them leftovers the other day, I've actually got another corned beef in the crock pot right now! Lol. This time I put in a can of Guinness. We'll see...

    This is Leap. He's helping me study
    (I know the random coughing globe in the background looks weird. I'm preparing to take my national certification for Phlebotomy)

    I foster with orange County Cavy Haven in CA. My last 2 fosters Darla and Puff (my avatar photo) were adopted last weekend. And Leap is possibly going to paired with a baby next weekend. My aunt had him originally, but she's a little further away from everyone in the rescue so the lady who runs the rescue decided to do some pig shuffeling. I got Leap as I'm closer to some babies so when it's time to hopefully pair him up,the commute is easier on both the piggers and their humans .

    what a little cutie pie! and very nice of him being so supportive - just be careful he doesn't get so into helping you study that he nibbles on your papers ^^

    I'd like to foster too but space and time don't really allow me to ATM but I'm hoping to get into it once my husband and I move to a bigger place! would be great if Leap found a new buddy soon but I would have a hard time letting them go Im sure. how do you cope with that? and excuse my ignorance but what is phlebotomy?

    He's a spunky little guy so I wouldn't put the page nibbling past him .

    I used to have pigs when I was younger, but I still live at home so the most I can do is just foster coz it's temporary. My mom would have a fit if it was permanent.

    It sucks cuz you get attached and you get to know their personality and their quirks, but it's also reassuring because I know the rescue is making sure the piggies get the best possible care and new home when they get adopted.

    And Phlebotomy= blood drawing. Like, if you need to get blood work done and you go to a lab.

    that's great your mom lets you do the whole foster experience even though she isnt open to having a permanent piggy family just yet, she might change her mind over time! and thank you for everything you do for all the piggies that come to be in your care! you might only have them temporary but you make a huge difference in their lives for sure

    and I had no idea there was an actual title for blood drawing related things! I don't like being poked with needles, I dont know if I could do that to others good luck, btw!

    I don't see it changing honestly until I'm out on my own, me and my mom have a rocky relationship.
    But I really love fostering. It's soo fun to see all the different piggie personalities.
    So far leap seems to be pretty spunky. He still isn't sure how he feels about me but I'm just letting him take his time. He's a little chatter pig!

    A lot of people don't realize it has an official title. I'm not hip on needles either, but I have a tattoo . I just don't like needles as I'm a semi hard draw . Thank you!
