Vegetables Breakfast & Dinner

SO I was wondering what would the PERFECT breakfast and dinner for 2-3 piggy consist of and how much?

For breakfast my two girls get yellow and green peppers, carrot and lettuce mixture. For dinner they get tomatoes, a string bean and lettuce mix. Not sure if it's enough but they enjoy it and are healthy and happy.
