I have heard that gelatin is not vegan, so since I became a vegan I have not eaten it. Does anyone know why it is not. What is gelatin?

There are alternatives, too. There are several threads on the subject in the forum. Vegan Products from Pangea Vegan Products--Cruelty-Free makes vegetarian fruit jel (AKA Jell-o) and marshmellows. Carageenan and agar-agar are common vegan sources of jelling agents. They are plant sources.

as a quick note, I've heard that most gelatin desserts at chinese buffets are made using the veggie/grass based gelatins.

Don't know if this is true or not, but it would be reasonable to me to be.
