Almond milk recipe
My family and I recently started to drink almond milk instead of cows milk in the quest to consume fewer animal products. However, almond milk from the store is expensive. We could go through one of those cartons of almond milk in one day, easily. We started making almond milk a couple of months ago. I played around with the recipe, and we all like this the best. It's creamy, but not too creamy, and not too sweet. It tastes great (much better than store bought), it's easy to make and it's cheaper than buying at the store. It breaks even with how much we were paying for cows milk, because we use organic ingredients.
1 cup almonds (soaked in water overnight in the fridge)
4 cups water
1/2 of a 6-7 inch vanilla bean (we use Tahitian vanilla beans. You could also use pure vanilla extract in place of vanilla beans), seeds scooped out
2 soft pitted dates or other sweetener to taste (such as stevia or honey)
Drain the soaking water off of the almonds. Place the almonds, water, half of the vanilla bean, and dates in a blender and blend until smooth. Strain the mixture through a cheesecloth, sprout bag or strainer into a big bowl. Pour into a pitcher. Store in the refrigerator. It will last 3-5 days.
