Good cookbooks?

Does anyone have or know of any good vegetarian cookbooks? I'm trying to cook for my family (who are not vegetarian) and substitute things for myself but it's getting really tiring. I need good recipes that they will not miss the meat. Any suggestions would be great.

Re: Good cookbooks?

Hi,
Unfortunately I am not still vegetarian (I fell out of the lifestyle after a year or two of college away from home and I could not cook in my dorm room and food choices became somewhat limited... I started getting sick) but anyway, I did it for 5 years and my family is not vegetarian. This is when I learned how to cook! My favorite cookbook ever was just something I picked up at Borders in their bargain deals section. It was just called something generic, vegetarian cooking or something like that, with an orange cover and asparagus on the front. You could try looking in Borders, and at the very least, you might find some good deals. I still cook a lot of recipes out of it to this day.
