Veggie Burger

Hi everyone I am looking for a tried and true recipe for a veggie burger. I want to be able to make them myself as opposed to buying processed soy/gardenburgers at the store.

Does anyone have any favorite recipes they can share with me?

I did search a bit, but didn't see any.

It doesn't have to be vegan, I'm trying to phase things out slowly. We're working on the veggie first.

Yes, good idea. I never thought about making my own veggie burgers. I personally hate the store-bought kind, so maybe homemade would be a good solution for me.

I have a great recipe made with mung bean sprouts. I'll post it tonight or tomorrow. I've been using it since 1973 and love it. Got it from a Seventeen magazine when I was a kid.

Here's a basic recipe that we've made with various seasonings: curry,
mexican (chili powder), etc. I usually skip the green pepper since I
don't care for it, and the celery if we don't already have some in the
house.

1 lb lentils, cooked until al dente
1 large onion, chopped
1 medium carrot, finely shredded
1 celery rib, finely diced
1/4 green pepper or red pepper, finely diced
2 medium potatoes, shredded
1/4 cup vegetable oil, for frying

1. Chop all veggies.
2. Saute the veggies in a very little oil, just till softened.
3. Drain lentils, mash half of them then combine all with veggies.
4. Season as you wish.
5. You can add some breadcrumbs and an egg if needed to enable you
to bind the mixture. (Chilling helps bind the mixture as well.)
6. Flour you hands to keep mixture from sticking to hands. and form
into patties.
7. Saute in a little oil till browned.

Here's another one that we sometimes make. I usually use one can of
black beans, drained and rinsed, instead of the home-cooked dried
beans.

Spicy Black Bean and Lentil Burgers

8 servings
time to make 35 min 15 min prep

6 ounces dried black beans
6 ounces dried lentils
1/2 small onion
3 garlic cloves
2 jalapeno peppers
2 teaspoons chili powder
2 teaspoons salt
1 teaspoon fresh ground pepper
2 beaten eggs
1/2 cup breadcrumbs

1. Prepare beans according to packages.
2. Allow beans to cool and mash well.
3. Chop onion, garlic, and jalapenos finely.
4. Mix all ingredients together in large mixing bowl.
5. Roll mix into hamburger patties.
6. Add to greased skillet until brown on both sides (5-8 min).

Fill jar with lukewarm water twice a day; let stand 1 minutes then drain through cheesecloth. Takes 4 to 5 days. Keep jar covered or in the dark. Sprouts are bitter in they become green from sunlight. [/FONT]

Those sound good, Emmett. We'll have to try that kind some time.

Just as an aside, you don't have to sprout your own mung beans -- they sell "bean sprouts" in most grocery stores -- the usual plain "bean sprouts" are almost always mung bean sprouts. They are white, and much thicker than alfalfa sprouts.

Thank you Phoeonix! I was thinking I wouldn't want to make Emmett's burger because I didn't want to sprout my own mung beans! Sounds more user-friendly to me if I can buy them. Both burger recipes sound great!

I am a vegetarian and i know how bad the store bought ones taste, eugh. So i was in the mood for cooking and fixed theses up.

Ingredients.
Veggie/vegan mince (any brand will do, i use quorn, it is not vegan though)
Potatoe chunks
breadcrumbs
Fruit juice (any flavour juice will do)
Egg or water( egg for veggie, water for vegan)
Mixed herbs (any)
Note: recipie can be made without egg or water and just fruit juice. Additional veggies can be added

1.Firstly soak the mince in fruit juice for at least 1 hour, overnight soaking is best.

2. Mix the egg ,water, or fruit juice in with the mince, potatoe, herbs, breadcrumbs and favoured veg.

3. Pat the mix into burger shapes. If they crumble add a little more water,egg or juice.

4. Place the burgers in a pan with a little oil and fry up until golden brown and firm.

The juice really adds flavour to the burgers. I reccomend apple juice as it gives the best flavour. This recipie is great, and can be changed to virtually anyones taste. Enjoy!

I don't like the store-bought ones that are supposed to taste like hamburger, but I do like several flavors of store-bought veggie burgers, in addition to the ones we make at home.

We like the Spicy Black Bean flavor from Morningstar Farms, the Gardenburger Original (mushroom) burgers, and the Indian Masala burgers from Trader Joe's. My kids like the Tomato and Basil Pizza veggie burgers from Morningstar Farms. I don't think any of those are vegan though (mabye TJs?).

We serve our veggie burgers with sliced cheddar, sliced avocado, sliced tomato, lettuce, mustard, etc. The kids call them "Super Burgers"
