Too many veggies?

I got hay and pellets from Sweet Meadow farm, which came finally this past Thursday. My piggies went about 11 days without any pellets so I was feeding them extra veg and even extra parsley to give them a bit extra calcium. One is 5 mo the other 9 mo.

They are eating the pellets, but never eating all of them. Since there are two piggies, I put 1/8 cup in twice a day (the second helping just before I go to bed). So I hope they each get about 1/8 cup. It's hard to tell since they eat out of each others' dishes.
I have two questions about this:
a) Must I remove the previous day's pellets when adding more?

b) Should I force myself to cut back on veggies from about 4 cups (2 each) to 2 cups (1 cup each)?
I'm finding it hard to cut down on veggies for them. If I give them fewer veggies, they don't eat any more pellets. They just seem to pee less and have drier poops. (I haven't gotten them to take water from the bottle.)
So, I find myself continuing to give them a lot of veggies, with lettuce being the majority. I'm alternating types of lettuce. They both eat many leaves of it per day. They have eaten green pepper, but sometimes refuse it.
They don't even like red bell pepper much. They do like a bit of fennel, cucumbers (usually a lot, but sometimes less), carrot - I give it only as treats - and parsley. They are not that keen on cilantro. If I put it out at night, most of it is there wilted in the morning. Lettuce is their clear and away favorite. The girl who had them before seemed to feed them only lettuce and parsley, plus junk food pellets.

a) You don't have to remove the previous day's pellets, but if there are already some in there, just add enough to make it 1/4 cup total per day rather than an additional 1/4 cup. You can feed pellets once a day if you prefer.

b) The amount of veggies sounds fine, but you need to get them eating bell pepper regularly (at least 1/8 pepper per pig per day). I would cut out the carrots, cucumber, and other things (except lettuce and cilantro) until they eat the pepper regularly. It might help to feed it opposite of the lettuce.

Just a suggestion, but you might want to try new foods with them to get more variety into their diet. I can never stress enough how important variety is in a good piggie diet.
