What are the most important things i should know about the care of outdoor cats? most importantly, what are their dietary needs?

Re: General cat care

You definately want to keep it up to date with it's shots. Would you be leaving food outside or letting the cat in to eat? If food is left outside it will attract other animals, which might leave none for the cat. Diseases can be carried through water also, so leaving a bowl of water outside where anyone can have access to it wouldn't be a good idea. I know I'm pointing out the negatives, but cats are much healthier when living indoors.

Spay and Neuter! Fixed cats are less likely to wander far and fight or get pregnant. Make sure all shots are up to date and have a collar with ID tag. Cats do not like the cold so try to bring her in at night, or maybe have an elevated small dog house for the cat. Be careful about the blankets because they can become frozen.
