Question How to get piggie to eat his veggies

We just got a new piggie on Saturday. I've read a ton about nutrition and have a few types of lettuces, parsley, baby carrots, cucumber, green pepper, tomato, & apples on hand. We were kind of excited to feed him his "salad" yesterday but quite frankly, the morning one he only ate a bit of the Romaine... the evening one he only tasted the parsley.

I'm wondering if it would be better to introduce one thing a day?
Or to give him his salad items during lap/floor time for now so he gets used to them?

All he seems to want to really eat is his Timothy hay and a bit of pellets.

Suggestions. Please be gentle, we're brand new and DO want to do the right thing.
